James Candlin acted for The Globe Theatre on 3rd May 2016 in a prosecution by the London Borough of Southwark of 4 counts under the Food Safety & Hygiene (England) Regulations 2013. The prosecution arose from a ‘sous vide’ cooking method error which occasioned a Clostridium Perfringens food poisoning outbreak affecting 30 diners. A highly qualified plea was negotiated after an application to dismiss the summons. Sentencing was an early case under the Health & Safety Offences, Corporate Manslaughter Food Safety and Hygiene Offences Definitive Guidelines, producing the favourable outcome of a £1,100 fine and a £623 costs order.
